Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, baking soda, and salt; mix well.
- In another bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until well combined.
- Gently fold in the chopped dates and any optional chocolate chips or nuts.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving space between each cookie.
- Flatten each cookie slightly with your fingers.
- Bake for about 10-12 minutes, or until the edges turn golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a vegan option, replace honey with maple syrup. Experiment with different add-ins like spices or dried fruit for unique flavors.
