Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 14 oz diced tomatoes
  • 4 cups beef or chicken broth
  • 8 oz lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add diced onions and minced garlic, sauté until fragrant and soft.
  2. Add the ground beef or sausage, cooking until browned, breaking it up with a spoon, then drain excess fat.
  3. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook for a few minutes to combine flavors.
  4. Pour in the broth and bring to a simmer.
  5. Add lasagna noodles, cooking until tender, about 8-10 minutes.
  6. Once cooked, stir in ricotta cheese until well combined.
  7. Top with shredded mozzarella cheese, cover the pot for a few minutes until cheese melts.

Notes

For a vegetarian option, use mushrooms or lentils instead of meat. Keep leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
