- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 14 oz diced tomatoes
- 4 cups beef or chicken broth
- 8 oz lasagna noodles
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add diced onions and minced garlic, sauté until fragrant and soft.
- Add the ground beef or sausage, cooking until browned, breaking it up with a spoon, then drain excess fat.
- Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook for a few minutes to combine flavors.
- Pour in the broth and bring to a simmer.
- Add lasagna noodles, cooking until tender, about 8-10 minutes.
- Once cooked, stir in ricotta cheese until well combined.
- Top with shredded mozzarella cheese, cover the pot for a few minutes until cheese melts.
Notes
For a vegetarian option, use mushrooms or lentils instead of meat. Keep leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
