- 4 tablespoons unsalted butter, cubed
- 2 egg yolks
- 1/3 cup hot milk

- 1 tablespoon milk
Instructions
- Make the Filling: In a saucepan, combine the diced apples, brown sugar, cinnamon, and vanilla. Cook over medium heat until the juices start to bubble (about 3 minutes). Mix apple cider and cornstarch in a small bowl, then add to the saucepan. Turn the heat to high and stir until thickened (about 3 more minutes). Remove from heat and set aside.
- Prepare the Dough: In a mixing bowl, sift the flour. Cut in the cold butter using a pastry cutter until the mixture resembles tiny lumps. In another bowl, whisk together egg yolks and salt. Heat the milk until steaming, then gradually stir into the egg mixture. Slowly add the wet mix to the flour, stirring until a dough forms. Knead briefly on parchment paper until smooth.
- Form the Pies: Divide the dough into six equal pieces and roll into balls. Flatten each into a circle. Place 2 tablespoons of apple filling on one half of each circle, then fold over and pinch the edges to seal. Optional: trim excess dough and crimp edges with a fork.
- Fry the Pies: Heat oil in a deep fryer or large pot until it reaches 350°F. Fry each pie for about 2 minutes on each side or until they are golden brown. Place on paper towels to drain.
- Glaze: Mix powdered sugar, milk, and vanilla until smooth. Brush or dip each fried pie for a luscious finish while they are still warm.
