- 2–3 tablespoons Olive oil
- Salt (to taste)
- Pepper (to taste)
- Herbs (optional, like rosemary or thyme)
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and chop your potatoes into evenly sized chunks, roughly 1-2 inches.
- Boil the potatoes in salted water for about 10 minutes, then drain well.
- In a large bowl, toss the drained potatoes with olive oil, salt, pepper, and any chosen herbs.
- Spread them on a baking sheet in a single layer.
- Roast in the preheated oven for 30-40 minutes, turning once halfway through.
- Serve hot and enjoy!
