Description

A comforting Southern-style dish featuring smoky bacon and tender green beans, perfect for any meal.


Ingredients

  • 5 slices thick cut bacon
  • 1 medium yellow onion (diced)
  • 2 medium cloves garlic (minced)
  • 2 cups chicken broth (plus more if needed)
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon crushed red pepper flakes
  • 1 1/2 pounds fresh green beans (washed with ends trimmed)
  • 1 Tablespoon butter

Instructions

  1. Cut the bacon into 1/4-inch pieces and cook in a large nonstick skillet over medium heat until crispy.
  2. Remove the bacon and set aside, reserving the grease in the skillet.
  3. Add the diced onions to the skillet and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Transfer the onion and garlic mix to your 6-quart crockpot, then discard the remaining bacon grease.
  6. Pour in the chicken broth and add garlic salt, black pepper, paprika, sugar, and red pepper flakes. Stir to combine.
  7. Toss in half of the cooked bacon and mix well.
  8. Lay the green beans in the crockpot, ensuring they’re tightly packed. Add more chicken broth as needed until the beans are about 90% submerged.
  9. Cook on low for 6-7 hours or high for 4 hours. Taste after 6 hours on low to check tenderness.
  10. Drain excess chicken broth and toss the green beans with butter and remaining bacon. Add salt and pepper to taste.

Notes

These green beans are great with grilled meats or cornbread. They can be frozen for later use.
