- 2 cups cooked shredded chicken (rotisserie chicken works great!)
- 1 can white beans (cannellini or great northern)
- 1 can corn (drained)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup cream or sour cream
- Fresh cilantro (for garnish)
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic. Sauté until they become translucent—this should take about 5 minutes.
- Next, stir in the cooked shredded chicken, canned white beans, drained corn, chicken broth, cumin, chili powder, salt, and pepper. Give it a good stir!
- Bring the mixture to a boil, then reduce the heat and let it simmer gently for about 20 minutes.
- Stir in your choice of cream or sour cream until well combined and heated through.
- Serve hot, garnished with fresh cilantro. Enjoy every comforting spoonful!
