- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 cups white cake mix
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups white chocolate chips, plus more for topping
- 1/2 cup rainbow sprinkles, plus more for topping
Instructions
- Preheat your oven to 350 degrees F and line your baking sheets with parchment paper.
- In a medium bowl, mix together the flour, cake mix, baking soda, and salt. Set aside.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the eggs and vanilla extract, scraping down the bowl’s sides.
- Slowly mix in the dry ingredients into the butter mixture until just combined.
- Fold in the white chocolate chips and sprinkles gently.
- Cover the dough and chill it in the fridge for at least 60 minutes.
- Scoop about 1.5 tablespoons of dough for each cookie and place them evenly on the prepared baking sheets.
- Press additional chocolate chips and a sprinkle of rainbow sprinkles on top.
- Bake for approximately 10 minutes until the edges are golden.
- Bang the pan lightly on the counter to create crinkly tops, then cool on a wire rack.
Notes
Serve with vanilla ice cream or a glass of milk. Store in an airtight container for up to a week or freeze for up to three months.
