- 1 cup rolled oats
- 1 cup flour (whole wheat or all-purpose)
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup melted coconut oil or butter
- 1 teaspoon vanilla extract
- 1 cup blueberries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a large bowl, mix the oats, flour, brown sugar, baking powder, salt, and cinnamon until well combined.
- In another bowl, blend the melted coconut oil and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.
- Gently fold in the blueberries to maintain their shape and flavor.
- Press the mixture evenly into the greased pan.
- Bake for 25 to 30 minutes, or until the surface is golden brown and the bars feel firm to the touch.
- Allow the bars to cool completely in the pan before cutting into squares and serving.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Customize with nuts or other fruits for variety.
