Description

Delicious Blueberry Oatmeal Bars made with wholesome oats and juicy blueberries, perfect for breakfast, snacks, or desserts.


Ingredients

  • 1 cup flour (whole wheat or all-purpose)
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a large bowl, mix the oats, flour, brown sugar, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, blend the melted coconut oil and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.
  4. Gently fold in the blueberries to maintain their shape and flavor.
  5. Press the mixture evenly into the greased pan.
  6. Bake for 25 to 30 minutes, or until the surface is golden brown and the bars feel firm to the touch.
  7. Allow the bars to cool completely in the pan before cutting into squares and serving.
