- 1 cup Greek yogurt
- 1/2 cup fresh blueberries
- 2 tbsp honey or maple syrup (to taste)
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- Prepare the blueberry compote: In a small saucepan, combine the blueberries, honey, and lemon juice. Cook over medium heat for about 5 minutes, stirring gently until the blueberries soften and release their juices.
- If using cornstarch, dissolve it in a small amount of water and stir it into the blueberry mixture to thicken slightly, then remove from heat and let it cool completely.
- In a mixing bowl, combine Greek yogurt and vanilla extract. Stir until smooth, adjusting sweetness with more honey or maple syrup if needed.
- Spoon the yogurt mixture into silicone molds or mini muffin tins, filling them about three-quarters full.
- Top each yogurt portion with a spoonful of cooled blueberry compote and swirl lightly with a toothpick.
- Place molds in the freezer and freeze for at least 3 hours or until solid.
- Remove yogurt bites from molds, let them sit for 2–3 minutes before enjoying.
Notes
Store in an airtight container in the freezer for up to 2 months. Try different fruits or yogurt flavors to customize.
