Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup fresh blueberries
  • 2 tbsp honey or maple syrup (to taste)
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. Prepare the blueberry compote: In a small saucepan, combine the blueberries, honey, and lemon juice. Cook over medium heat for about 5 minutes, stirring gently until the blueberries soften and release their juices.
  2. If using cornstarch, dissolve it in a small amount of water and stir it into the blueberry mixture to thicken slightly, then remove from heat and let it cool completely.
  3. In a mixing bowl, combine Greek yogurt and vanilla extract. Stir until smooth, adjusting sweetness with more honey or maple syrup if needed.
  4. Spoon the yogurt mixture into silicone molds or mini muffin tins, filling them about three-quarters full.
  5. Top each yogurt portion with a spoonful of cooled blueberry compote and swirl lightly with a toothpick.
  6. Place molds in the freezer and freeze for at least 3 hours or until solid.
  7. Remove yogurt bites from molds, let them sit for 2–3 minutes before enjoying.

Notes

Store in an airtight container in the freezer for up to 2 months. Try different fruits or yogurt flavors to customize.
