Ingredients

- 1½ cups (370g) plain Greek yogurt
- 1 tablespoon honey or maple syrup
- ½ teaspoon vanilla extract
- ¾ cup (100g) fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey (optional)
- 1 teaspoon chia seeds (optional)
Instructions
- Prepare the Blueberry Compote: In a small saucepan, combine the blueberries, lemon juice, and optional honey over medium heat. Cook for about 5–6 minutes, stirring frequently until the blueberries soften. Remove from heat and stir in chia seeds. Let cool.
- Make the Yogurt Base: In a bowl, whisk Greek yogurt, vanilla extract, and honey until smooth.
- Assemble the Bites: Spoon 1 tablespoon of yogurt mixture into molds, top with blueberry compote, and swirl for a marbled effect.
- Freeze: Place the tray in the freezer for at least 2 hours.
- Serve: Once firm, remove the bites from the molds and enjoy!
Notes
Store in an airtight container in the freezer for up to two months. Thaw for 2–4 minutes before eating.
