Ingredients

- 1 small head of green cabbage, shredded
- 1 small head of purple cabbage, shredded
- 2 carrots, grated
- 1 red bell pepper, diced
- 1 green onion, sliced
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- Salt and pepper to taste
- Optional: 1 teaspoon celery seed
Instructions
- In a large bowl, combine the shredded green cabbage, purple cabbage, grated carrots, diced red bell pepper, and sliced green onion.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Include celery seed if you desire.
- Pour the dressing over the cabbage mixture, tossing everything until coated evenly.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Notes
For the best flavor, prepare the coleslaw a day in advance. Use fresh vegetables for the best texture.
