- 2 cups pasta (penne or fettuccine)
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 package (5.2 oz) Boursin cheese
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions, then drain it and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until browned and fully cooked. Remove from the pan and slice into strips.
- In the same skillet, add the minced garlic and sauté for 1 minute.
- Stir in the Boursin cheese along with the heavy cream and mix until you have a smooth and creamy sauce.
- Add the cooked pasta and sliced chicken back into the skillet, tossing to coat everything well. Season with salt and pepper to taste.
- Serve immediately, garnished with freshly chopped parsley.
Notes
For a lighter version, substitute heavy cream with half-and-half or a milk alternative. Add a splash of white wine for extra flavor, or toss in some spinach or sun-dried tomatoes.
