			- 1 cup brown sugar
 - 1 cup all-purpose flour
 - 1/4 cup brewed and cooled coffee
 - 1/2 cup softened butter
 - 1 tsp vanilla extract
 - 1/4 tsp baking soda
 - A pinch of salt
 - Raw sugar for topping
 
Instructions
- Preheat your oven to 350°F (175°C).
 - Cream together the softened butter and brown sugar in a mixing bowl until smooth and fluffy.
 - Stir in the cooled brewed coffee and vanilla extract until fully combined.
 - In another bowl, whisk together the flour, baking soda, and salt.
 - Gradually add the dry ingredients to the wet mixture, stirring until just combined.
 - Using a tablespoon, scoop portions of dough onto a lined baking sheet with enough space between each cookie.
 - Sprinkle raw sugar on top of each cookie.
 - Bake for 10-12 minutes or until the edges are lightly golden brown.
 - Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
