Ingredients

  • 1/4 cup brewed and cooled coffee
  • 1/2 cup softened butter
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • A pinch of salt
  • Raw sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and brown sugar in a mixing bowl until smooth and fluffy.
  3. Stir in the cooled brewed coffee and vanilla extract until fully combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Using a tablespoon, scoop portions of dough onto a lined baking sheet with enough space between each cookie.
  7. Sprinkle raw sugar on top of each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden brown.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
