- 4 Roma tomatoes, diced
- ¼ cup fresh basil leaves, chopped
- 1 garlic clove, minced
- 1 tablespoon extra virgin olive oil
- 1–2 teaspoons balsamic vinegar
- Salt, to taste
- 8 oz feta cheese, crumbled
- ½ block (4 oz) cream cheese, softened
- ½ cup sour cream
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil
- Red pepper flakes, to taste
- Freshly grated Parmesan cheese, for garnish
- More basil leaves, chopped, for garnish
Instructions
- Prepare the Bruschetta Topping: In a bowl, combine diced Roma tomatoes, basil, minced garlic, olive oil, balsamic vinegar, and salt. Mix well and set aside to marinate.
- Prepare the Cheese Mixture: In another bowl, blend crumbled feta, softened cream cheese, sour cream, lemon juice, and olive oil until smooth.
- Assemble the Dip: Spread the cheese mixture on the bottom of a serving dish, then top with the marinated bruschetta topping.
- Garnish: Sprinkle with red pepper flakes, additional basil, and grated Parmesan.
- Serve: Pair with toasted baguette slices or crunchy pita chips.
Notes
Best enjoyed fresh, but flavors develop if made a few hours in advance. Store leftovers in the refrigerator for up to 2 days.
