Description

A creamy and flavorful dip made with fresh roma tomatoes, aromatic basil, and a blend of cheeses, perfect for any gathering.


Ingredients

  • 4 Roma tomatoes, diced
  • ¼ cup fresh basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt, to taste
  • 8 oz feta cheese, crumbled
  • ½ block (4 oz) cream cheese, softened
  • ½ cup sour cream
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil
  • Red pepper flakes, to taste
  • Freshly grated Parmesan cheese, for garnish
  • More basil leaves, chopped, for garnish

Instructions

  1. Prepare the Bruschetta Topping: In a bowl, combine diced Roma tomatoes, basil, minced garlic, olive oil, balsamic vinegar, and salt. Mix well and set aside to marinate.
  2. Prepare the Cheese Mixture: In another bowl, blend crumbled feta, softened cream cheese, sour cream, lemon juice, and olive oil until smooth.
  3. Assemble the Dip: Spread the cheese mixture on the bottom of a serving dish, then top with the marinated bruschetta topping.
  4. Garnish: Sprinkle with red pepper flakes, additional basil, and grated Parmesan.
  5. Serve: Pair with toasted baguette slices or crunchy pita chips.

Notes

Best enjoyed fresh, but flavors develop if made a few hours in advance. Store leftovers in the refrigerator for up to 2 days.
