Description

Chocolate-dipped peanut butter balls, a nostalgic treat perfect for holidays and gatherings.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar
  • 1/4 teaspoon sea salt
  • 12 oz semisweet chocolate chips
  • 11.5 oz milk chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line a large baking sheet with parchment paper and set aside.
  2. Cream together the softened butter and peanut butter until silky smooth.
  3. Mix in the vanilla extract and salt until combined.
  4. Gradually add the confectioners’ sugar, mixing until the dough is thick enough to roll into balls.
  5. Scoop out tablespoon-sized portions and roll into balls, placing each on the prepared baking sheet.
  6. Insert a toothpick into each ball and refrigerate for 15 minutes to 1 hour.
  7. Melt both types of chocolate and coconut oil together, stirring often.
  8. Dip each chilled ball into the melted chocolate until about 80% coated.
  9. Place them back on the baking sheet and let the chocolate set before removing the toothpicks.

Notes

For a nut-free version, use sun butter instead of peanut butter. Quality chocolate enhances the flavor.
