- 1/2 cup unsalted butter, softened
- 2 cups creamy peanut butter
- 1 teaspoon vanilla extract
- 4 cups confectioners’ sugar
- 1/4 teaspoon sea salt
- 12 oz semisweet chocolate chips
- 11.5 oz milk chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line a large baking sheet with parchment paper and set aside.
- Cream together the softened butter and peanut butter until silky smooth.
- Mix in the vanilla extract and salt until combined.
- Gradually add the confectioners’ sugar, mixing until the dough is thick enough to roll into balls.
- Scoop out tablespoon-sized portions and roll into balls, placing each on the prepared baking sheet.
- Insert a toothpick into each ball and refrigerate for 15 minutes to 1 hour.
- Melt both types of chocolate and coconut oil together, stirring often.
- Dip each chilled ball into the melted chocolate until about 80% coated.
- Place them back on the baking sheet and let the chocolate set before removing the toothpicks.

Notes
For a nut-free version, use sun butter instead of peanut butter. Quality chocolate enhances the flavor.
