Description

Quick and satisfying Buffalo Chicken Bowls with tender chicken, spicy Buffalo sauce, rice, fresh veggies, and creamy dressing.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch or blue cheese dressing
  • 1/4 cup thinly sliced green onions
  • Optional: sliced avocado, for topping

Instructions

  1. Prepare the Buffalo Sauce: In a small bowl, mix the hot sauce and melted butter until combined. Set aside.
  2. Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through.
  3. Coat the Chicken: Lower the heat and pour the prepared Buffalo sauce over the chicken. Stir to coat evenly and let it simmer for 3-5 minutes to absorb the flavors.
  4. Assemble the Bowls: Begin with a layer of cooked rice at the bottom of each bowl. Spoon the Buffalo chicken over the rice.
  5. Add the Toppings: Top with shredded lettuce, halved cherry tomatoes, and a sprinkle of shredded cheddar cheese. Drizzle your choice of ranch or blue cheese dressing over the top.
  6. Garnish: Finish with thinly sliced green onions and, if desired, add slices of avocado for creaminess.
  7. Serve: Enjoy immediately while the dish is hot and fresh.

Notes

For added flavor, consider serving with corn salad or crispy tortilla chips.
