- 1 cup shredded lettuce
- 1 cup cherry tomatoes, halved

Instructions
- Prepare the Buffalo Sauce: In a small bowl, mix the hot sauce and melted butter until combined. Set aside.
- Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through.
- Coat the Chicken: Lower the heat and pour the prepared Buffalo sauce over the chicken. Stir to coat evenly and let it simmer for 3-5 minutes to absorb the flavors.
- Assemble the Bowls: Begin with a layer of cooked rice at the bottom of each bowl. Spoon the Buffalo chicken over the rice.
- Add the Toppings: Top with shredded lettuce, halved cherry tomatoes, and a sprinkle of shredded cheddar cheese. Drizzle your choice of ranch or blue cheese dressing over the top.
- Garnish: Finish with thinly sliced green onions and, if desired, add slices of avocado for creaminess.
