- 4 cups chicken broth
- 2 cups rice noodles
- 1 onion, sliced
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp turmeric
- 1 tbsp soy sauce

- Fresh cilantro (for garnishing)
- Lime wedges (for serving)
Instructions
- In a large pot, heat a small amount of oil over medium heat.
- Add sliced onion, minced garlic, and grated ginger. Sauté until fragrant, about 2-3 minutes.
- Add the sliced chicken and cook until browned on all sides.
- Stir in the turmeric and soy sauce, cooking for an additional minute to release the flavors.
- Pour in the chicken broth and bring it to a boil.
- Add the rice noodles and cook according to package instructions, usually around 5-7 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
For deeper flavor, marinate the chicken in soy sauce for 15-30 minutes before cooking. Separate noodles before freezing leftovers to prevent them from becoming mushy.
