  • Total Time: 30 minutes
  • Yield: 4 servings 1x
  • Diet: Gluten-Free (if using tamari and gluten-free noodles)

Description

A vibrant and comforting bowl of Burmese Chicken Noodle Soup featuring tender chicken, soothing broth, and chewy rice noodles, spiced with ginger and turmeric.

Ingredients

Scale
  • 1 lb chicken breast, sliced
  • 4 cups chicken broth
  • 2 cups rice noodles
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 tsp turmeric
  • 1 tbsp soy sauce
  • Salt and pepper to taste
  • Fresh cilantro (for garnishing)
  • Lime wedges (for serving)

Instructions

  1. In a large pot, heat a small amount of oil over medium heat.
  2. Add sliced onion, minced garlic, and grated ginger. Sauté until fragrant, about 2-3 minutes.
  3. Add the sliced chicken and cook until browned on all sides.
  4. Stir in the turmeric and soy sauce, cooking for an additional minute to release the flavors.
  5. Pour in the chicken broth and bring it to a boil.
  6. Add the rice noodles and cook according to package instructions, usually around 5-7 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

For deeper flavor, marinate the chicken in soy sauce for 15-30 minutes before cooking. Separate noodles before freezing leftovers to prevent them from becoming mushy.
