- 12 ounces pasta (penne or fettuccine)
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 medium onion, diced
- 1 cup heavy cream (or coconut milk)
- 1 cup chicken broth (low-sodium preferred)
- 1 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Season chicken with salt and pepper and cook until golden brown, about 6-8 minutes. Remove and set aside.
- Add the remaining butter to the skillet, then sauté garlic and onion until translucent, about 3-4 minutes.
- Add heavy cream and chicken broth, mix well. Stir in Italian seasoning and red pepper flakes, and simmer for about 5 minutes.
- Return the cooked chicken and drained pasta to the skillet, adjust seasoning, and mix thoroughly.
- Top with grated Parmesan cheese and let it melt. Garnish with fresh parsley if desired. Serve warm and enjoy!
Notes
For a lighter option, substitute heavy cream with half-and-half or coconut milk. Consider pairing with a fresh green salad or garlic bread.
