- 1 medium butternut squash, peeled and cubed
- 2 large apples, peeled and sliced
- 1 cup raisins
- 1 cup cranberries (fresh or dried)
- 1 cup pecans, chopped
- 2 teaspoons cinnamon
- 2 tablespoons maple syrup (optional)
- Salt to taste
- Butter or oil for greasing the baking dish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix together the cubed butternut squash, sliced apples, raisins, cranberries, and chopped pecans.
- Sprinkle in the cinnamon, along with maple syrup and salt if desired, and stir well to combine.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Cover the dish with foil and bake for 30 minutes.
- After 30 minutes, remove the foil and bake for another 15-20 minutes until the squash is tender and has a hint of caramelization.
Notes
For added texture, consider sprinkling granola on top before baking. You can swap pecans for walnuts or almonds, and make it vegan by using plant-based oil.
