  • 1 medium butternut squash, peeled and cubed
  • 2 large apples, peeled and sliced
  • 1 cup raisins
  • 1 cup cranberries (fresh or dried)
  • 1 cup pecans, chopped
  • 2 teaspoons cinnamon
  • 2 tablespoons maple syrup (optional)
  • Salt to taste
  • Butter or oil for greasing the baking dish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the cubed butternut squash, sliced apples, raisins, cranberries, and chopped pecans.
  3. Sprinkle in the cinnamon, along with maple syrup and salt if desired, and stir well to combine.
  4. Transfer the mixture to a greased baking dish, spreading it evenly.
  5. Cover the dish with foil and bake for 30 minutes.
  6. After 30 minutes, remove the foil and bake for another 15-20 minutes until the squash is tender and has a hint of caramelization.

Notes

For added texture, consider sprinkling granola on top before baking. You can swap pecans for walnuts or almonds, and make it vegan by using plant-based oil.
