- 1 large butternut squash, peeled and cubed
- 1 large onion, thinly sliced
- 2 cups shredded cheese (cheddar or gruyere)

Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash and sliced onions in olive oil, salt, and pepper.
- Spread them on a baking sheet and roast in the oven for 25-30 minutes until tender.
- In a large mixing bowl, combine the roasted squash, onions, cheese, and fresh sage.
- Transfer the mixture to a greased casserole dish.
- Sprinkle breadcrumbs on top if using.
- Bake at 350°F (175°C) for an additional 20-25 minutes until the cheese is melted and bubbly.
- Serve warm as a main or side dish.
