Description

Ingredients

  • 1 head of garlic
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter (for garlic butter)
  • 1 tablespoon fresh parsley
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for dough)
  • 2 egg yolks
  • 1 ½ teaspoons salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese
  • Garlic butter (prepared previously)
  • 1 egg (for egg wash)

Instructions

  1. Roast the Garlic: Cut the top off the garlic head, drizzle with olive oil, and sprinkle with salt. Wrap it in aluminum foil and roast at 160°C (320°F) for about 120 minutes until soft.
  2. Prepare the Garlic Butter: Once the garlic is ready, mash it with softened butter, add chopped parsley, and mix in 2 tablespoons of the garlic oil. Set aside.
  3. Mix the Yeast: In a bowl, combine warm milk, active dry yeast, and honey. Let it proof for about 10 minutes until frothy.
  4. Make the Dough: In a mixing bowl, combine all-purpose flour, bread flour, sugar, milk powder, softened butter, salt, and the yeast mixture.
  5. Knead the Dough: Use a dough hook on medium speed to knead for 15-20 minutes until soft and smooth.
  6. Proof the Dough: Place in a covered bowl and let rise in a warm place for about 90 minutes, until it doubles in size.
  7. Roll Out the Dough: Roll the dough to about 0.6 cm thick. Spread the garlic butter over the surface.
  8. Add Cheese: Sprinkle mozzarella cheese on top, then tightly roll into a log.
  9. Cut the Dough: Slice the log into 6 equal portions.
  10. Second Proof: Arrange rolls on a baking sheet, cover, and let proof for another 30 minutes until puffy.
  11. Bake: Preheat oven to 175°C (350°F), brush rolls with egg wash, and bake for 20-25 minutes.
  12. Decorate: Brush baked rolls with leftover garlic butter and sprinkle with chopped parsley before serving.
