  • 90 grams of warm milk (to activate yeast)
  • 7 grams of active dry yeast (for leavening)
  • 25 grams of honey (to nourish the yeast)
  • 200 grams of all-purpose flour
  • 50 grams of bread flour (for texture)
  • 20 grams of milk powder (optional, for richness)
  • 2 egg yolks (for a rich dough)
  • 1 ½ teaspoon of salt
  • 1 tablespoon of sugar (to activate yeast)
  • 200 grams of mozzarella cheese (for that glorious filling)
  • 1 egg (for egg wash)

Instructions

  1. Roast Garlic: In a ramekin, place a whole head of garlic (cut off the top). Drizzle with olive oil, sprinkle with salt, and cover with aluminum foil. Roast at 160°C (320°F) for 2 hours until soft and creamy.
  2. Make Garlic Butter: Mash the roasted garlic with softened butter, chopped parsley, and 2 tablespoons of the garlic oil. Set aside.
  3. Prepare Yeast Mixture: In a bowl, mix warm milk, active dry yeast, and honey. Let it sit for about 10 minutes until frothy.
  4. Combine the Dough Ingredients: In a large mixing bowl, add all-purpose flour, bread flour, sugar, milk powder, softened butter, salt, egg yolks, and the yeast mixture.
  5. Knead the Dough: Using a dough hook attachment, knead on medium speed for about 15-20 minutes until the dough is smooth and elastic.
  6. First Proof: Place the dough in a covered bowl and let it proof in a warm place for 90 minutes, or until it doubles in size.
  7. Roll Out the Dough: After proofing, roll out the dough to about 1/4 cm (or 1/8 inch) thickness.
  8. Layer with Garlic Butter and Cheese: Spread the garlic butter evenly on the surface and sprinkle mozzarella cheese on top.
  9. Shape the Rolls: Roll the dough tightly into a log, then cut it into 6 equal portions.
  10. Second Proof: Place the rolls on a baking sheet, cover, and let them rest for an additional 30 minutes until puffy.
  11. Bake the Rolls: Preheat the oven to 175°C (350°F). Brush the rolls with an egg wash and bake for 20-25 minutes or until golden brown.
  12. Final Touch: Brush the baked rolls with leftover garlic butter and sprinkle with chopped parsley before serving.
