These rolls are a comforting blend of gooey mozzarella and rich garlic butter, perfect for any meal.

- 1 head of garlic
- Sprinkle of salt
- 30 grams olive oil
- 50 grams butter (softened)
- 1 tablespoon fresh parsley (chopped)
- 90 grams warm milk
- 7 grams active dry yeast
- 25 grams honey
- 200 grams all-purpose flour
- 50 grams bread flour
- 20 grams milk powder (optional)
- 25 grams melted butter (for brushing)
- 2 egg yolks
- 1 ½ teaspoons salt
- 1 tablespoon sugar
- 200 grams mozzarella cheese (shredded)
- 1 egg (for egg wash)
Instructions
- Roast the garlic by placing in a ramekin with olive oil and salt, covering with foil, and roasting at 160°C (320°F) for 2 hours until soft.
- Make garlic butter by mixing roasted garlic with softened butter, chopped parsley, and garlic oil, then let it cool.
- Prepare yeast mixture by combining warm milk, yeast, and honey and letting it proof for 10 minutes.
- Mix the dough by combining all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, egg yolks, and yeast mixture in a large bowl.
- Knead the dough with a dough hook for 15-20 minutes until soft and smooth.
- Let the dough proof in a covered bowl in a warm place for 1 hour and 30 minutes until doubled in size.
- Roll out the dough to 1/4 cm thickness and spread garlic butter over it.
- Sprinkle mozzarella cheese evenly over the surface.
- Shape the rolls by rolling the dough into a log and cutting it into 6 equal pieces.
- Second proof for 30 minutes on a baking sheet until puffy.
- Bake in a preheated oven at 175°C (350°F) for 20-25 minutes, brushing with egg wash for golden color.
- Brush with leftover garlic butter and sprinkle additional parsley before serving.
Notes
For a unique twist, consider adding herbs like thyme or rosemary, or using a sharp cheddar cheese.
