Description

These rolls are a comforting blend of gooey mozzarella and rich garlic butter, perfect for any meal.


Ingredients

  • 1 head of garlic
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter (softened)
  • 1 tablespoon fresh parsley (chopped)
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams melted butter (for brushing)
  • 2 egg yolks
  • 1 ½ teaspoons salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese (shredded)
  • 1 egg (for egg wash)

Instructions

  1. Roast the garlic by placing in a ramekin with olive oil and salt, covering with foil, and roasting at 160°C (320°F) for 2 hours until soft.
  2. Make garlic butter by mixing roasted garlic with softened butter, chopped parsley, and garlic oil, then let it cool.
  3. Prepare yeast mixture by combining warm milk, yeast, and honey and letting it proof for 10 minutes.
  4. Mix the dough by combining all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, egg yolks, and yeast mixture in a large bowl.
  5. Knead the dough with a dough hook for 15-20 minutes until soft and smooth.
  6. Let the dough proof in a covered bowl in a warm place for 1 hour and 30 minutes until doubled in size.
  7. Roll out the dough to 1/4 cm thickness and spread garlic butter over it.
  8. Sprinkle mozzarella cheese evenly over the surface.
  9. Shape the rolls by rolling the dough into a log and cutting it into 6 equal pieces.
  10. Second proof for 30 minutes on a baking sheet until puffy.
  11. Bake in a preheated oven at 175°C (350°F) for 20-25 minutes, brushing with egg wash for golden color.
  12. Brush with leftover garlic butter and sprinkle additional parsley before serving.

Notes

For a unique twist, consider adding herbs like thyme or rosemary, or using a sharp cheddar cheese.
