Instructions
- Cook the soba noodles according to package instructions, drain and set aside.
- In a large pot, heat sesame oil over medium heat, then add minced garlic and grated ginger, cooking until fragrant.
- Add sliced chicken and cook until golden.
- Pour in chicken broth and bring to a boil.
- Add cabbage, carrots, and bell pepper, reduce heat, and simmer for about 10 minutes until vegetables are tender.
- Stir in cooked soba noodles and soy sauce, seasoning with salt and pepper to taste.
- Serve hot, garnished with green onions.
