Ingredients

  • 8 ounces egg noodles
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the onion, carrots, celery, and garlic; sauté until the vegetables become tender.
  4. Mix in the Cajun seasoning and stir well.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Add the egg noodles and cook according to package instructions.
  7. Near the end of cooking, incorporate the frozen peas and season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes

For a vegetarian version, substitute chicken with chickpeas or lentils and use vegetable broth. Additionally, using rotisserie chicken can save time; add it in step 5.
