Ingredients

- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 6 cups chicken broth
- 8 ounces egg noodles
- 1 cup frozen peas
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the onion, carrots, celery, and garlic; sauté until the vegetables become tender.
- Mix in the Cajun seasoning and stir well.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the egg noodles and cook according to package instructions.
- Near the end of cooking, incorporate the frozen peas and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
For a vegetarian version, substitute chicken with chickpeas or lentils and use vegetable broth. Additionally, using rotisserie chicken can save time; add it in step 5.
