- 1 lb Andouille sausage, sliced
- 4 medium potatoes, diced
- 1 cup onions, chopped
- 1 cup bell peppers, chopped
- 1 cup celery, chopped
- 2 tablespoons Cajun spices
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
Instructions
- In a large pot, cook sliced Andouille sausage over medium heat until browned.
- Add diced potatoes and chopped vegetables. Sauté them for several minutes until softened.
- Stir in your chosen Cajun spices and cook for an additional minute to release those aromatics.
- Pour in enough water or chicken broth to cover the veggies, then bring it to a boil.
- Reduce heat and let it simmer until the potatoes are tender.
- Stir in the heavy cream and shredded cheddar cheese until they melt and blend beautifully.
- Season with salt and pepper to your liking.
- Serve hot, garnished with extra cheddar cheese or chopped green onions if desired.
Notes
Store leftovers in an airtight container for 3-4 days, or freeze for later use. Reheat by thawing overnight and warming on the stovetop.
