  • Yield: 4 servings 1x
  • Diet: Omnivore

Description

A delightful fusion of creamy potato soup with bold Cajun spices and hearty Andouille sausage.

Ingredients

Scale
  • 1 lb Andouille sausage, sliced
  • 4 medium potatoes, diced
  • 1 cup onions, chopped
  • 1 cup bell peppers, chopped
  • 1 cup celery, chopped
  • 2 tablespoons Cajun spices
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. In a large pot, cook sliced Andouille sausage over medium heat until browned.
  2. Add diced potatoes and chopped vegetables. Sauté them for several minutes until softened.
  3. Stir in your chosen Cajun spices and cook for an additional minute to release those aromatics.
  4. Pour in enough water or chicken broth to cover the veggies, then bring it to a boil.
  5. Reduce heat and let it simmer until the potatoes are tender.
  6. Stir in the heavy cream and shredded cheddar cheese until they melt and blend beautifully.
  7. Season with salt and pepper to your liking.
  8. Serve hot, garnished with extra cheddar cheese or chopped green onions if desired.

Notes

Store leftovers in an airtight container for 3-4 days, or freeze for later use. Reheat by thawing overnight and warming on the stovetop.
