Ingredients

  • 1 lb Andouille Sausage, sliced
  • 4 medium Potatoes, diced (Yukon Gold or Russets)
  • 2 cups Mixed Vegetables (frozen or fresh)
  • 23 tablespoons Cajun Spices
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. In a large pot, sauté sliced andouille sausage until browned and fragrant.
  2. Add diced potatoes and mixed vegetables, and stir for a few minutes.
  3. Sprinkle Cajun spices to taste.
  4. Pour in enough water or broth to cover the ingredients and bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender.
  6. Stir in heavy cream and cheddar cheese until melted and well combined.
  7. Serve hot, garnished with extra cheese or green onions if desired.

Notes

For a vegetarian version, swap the sausage for smoked paprika and use vegetable broth.
