- 1 lb Andouille Sausage, sliced
- 4 medium Potatoes, diced (Yukon Gold or Russets)
- 2 cups Mixed Vegetables (frozen or fresh)
- 2–3 tablespoons Cajun Spices
- 4 cups Chicken Broth
- 1 cup Heavy Cream
- 1 cup Shredded Cheddar Cheese
Instructions
- In a large pot, sauté sliced andouille sausage until browned and fragrant.
- Add diced potatoes and mixed vegetables, and stir for a few minutes.
- Sprinkle Cajun spices to taste.
- Pour in enough water or broth to cover the ingredients and bring to a boil.
- Reduce heat and simmer until the potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted and well combined.
- Serve hot, garnished with extra cheese or green onions if desired.
Notes
For a vegetarian version, swap the sausage for smoked paprika and use vegetable broth.
