  • 2 cloves garlic, minced
  • 12 tablespoons Cajun seasoning
  • Salt and pepper, to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Cook the sausage until browned, then add the onion and garlic, sautéing until soft.
  3. Stir in the Cajun seasoning and diced tomatoes, cooking briefly.
  4. Add penne pasta and cover with enough water to boil.
  5. Reduce the heat, cover, and cook until pasta is done.
  6. Stir in heavy cream and cheese until combined and melted.
  7. Season with salt and pepper, and garnish with parsley before serving.
