  • 1 (12-ounce) can Beer (optional)
  • 3 tablespoons Creole Cajun Seasoning
  • 1 tablespoon Old Bay seasoning
  • Hot Sauce to taste
  • 1 medium Yellow Onion, sliced into half-moons
  • 1 large Lemon, cut into wedges
  • 12 ounces Andouille Sausage, sliced into rounds
  • 1 lb Baby Potatoes, red or gold
  • 1 lb Snow Crab Leg Clusters (pre-cooked)
  • 1 lbs Jumbo Shrimp, deveined
  • 46 ears Sweet Corn, preferably mini
  • 46 Hard Boiled Eggs (optional)
  • 1 cup Unsalted Butter (2 sticks)
  • 10 cloves Garlic, minced
  • 2 tablespoons Lemon Juice, freshly squeezed
  • 1 tablespoon Fresh Chopped Parsley
  • 1 teaspoon Smoked Paprika

Instructions

  1. In a large stockpot (at least 10 quarts), combine water and beer, and bring to a boil over medium-high heat.
  2. Stir in Creole seasoning, Old Bay, and hot sauce, then add onion and lemon wedges. Allow to boil for about 15 minutes.
  3. Add the sliced sausage and baby potatoes, cooking for another 15-20 minutes until the potatoes are fork-tender.
  4. Gently nestle the snow crab, shrimp, and corn into the pot, ensuring everything is submerged. Continue boiling for an additional 5-7 minutes until the shrimp turns pink.
  5. Prepare the garlic butter sauce in a separate pan by combining butter, garlic, lemon juice, Old Bay, parsley, Cajun seasoning, and smoked paprika over medium heat, stirring until melted (about 5-7 minutes).
  6. Line a large baking sheet with foil or parchment. Lift the seafood mix out with a spider strainer and place it on the baking sheet — discard the onion and lemon bits.
  7. Pour the garlic butter sauce over the seafood and toss everything together for an even coating.
