Chicken wings are a nice winter food. I’ll be posting several variations of chicken wings here for the next few posts. So, if you don’t like this particular recipe, check back soon!
This recipe will take about a half hour to prepare and another half hour to bake.
You’ll need:

12 chicken wings

5 bay leaves

3/4 teaspoon caraway seeds

1/2 – 3/4 teaspoon cayenne pepper

3/4 teaspoon ground cumin

3/4 teaspoon ground coriander

4 minced garlic cloves

1 1/2 teaspoons dry mustard

2 teaspoons paprika

3/4 teaspoon thyme leaves

1/2 teaspoon salt

2 tablespoons brandy
-
2 tablespoons lemon juice
Cook the thawed chicken wings in boiling water for 10 minutes, then drain the water and let them cool. Preheat the oven to 375 degrees. Grind together the bay leaves, caraway seeds, cayenne pepper, coriander, cumin, garlic, mustard, paprika, thyme and salt. Add the brandy and lemon juice to the ground mixture and stir it into a paste. Brush both sides of each chicken wing with the paste until you use all of the mixture. Place the chicken wings on a baking sheet and bake them until the skin turns brown and is crisp. This should take approximately 30 minutes.
