Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cans white beans (e.g., cannellini or great northern), drained and rinsed
  • 4 cups chicken broth
  • 1 can diced green chilies
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion becomes translucent.
  2. Add the sliced andouille sausage, cooking until nicely browned.
  3. Stir in the chicken breast and Cajun seasoning, cooking until the chicken is no longer pink.
  4. Pour in the chicken broth and bring it all to a boil.
  5. Add the white beans and diced green chilies. Reduce the heat and let it simmer.
  6. Allow to simmer for about 20 minutes, then toss in the shrimp and cook until they are pink and opaque.
  7. Taste your chili, adjusting salt and pepper to your preference.
  8. Serve hot, garnished with chopped green onions.

For vegetarian options, substitute chicken and sausage with plant-based proteins and use vegetable broth.
