A comforting, hearty Cajun twist on classic chili with layers of flavor from chicken, andouille sausage, beans, and spices.

- 1 lb boneless, skinless chicken breast
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cans white beans (e.g., cannellini or great northern), drained and rinsed
- 4 cups chicken broth
- 1 can diced green chilies
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion becomes translucent.
- Add the sliced andouille sausage, cooking until nicely browned.
- Stir in the chicken breast and Cajun seasoning, cooking until the chicken is no longer pink.
- Pour in the chicken broth and bring it all to a boil.
- Add the white beans and diced green chilies. Reduce the heat and let it simmer.
- Allow to simmer for about 20 minutes, then toss in the shrimp and cook until they are pink and opaque.
- Taste your chili, adjusting salt and pepper to your preference.
- Serve hot, garnished with chopped green onions.

For vegetarian options, substitute chicken and sausage with plant-based proteins and use vegetable broth.
