- 2 cups rice noodles
- 1 lb chicken breast, sliced thinly
- 4 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- A handful of fresh herbs (basil, cilantro, or mint)
- Salt and pepper to taste
Instructions
- Cook the rice noodles according to the package instructions. Once done, drain and set aside.
- In a large pot, heat a splash of oil over medium heat. Sauté the chopped onion, minced garlic, and grated ginger until fragrant.
- Add the sliced chicken to the pot and cook until browned and fully cooked through.
- Pour in the chicken broth and bring everything to a gentle simmer.
- Stir in the fish sauce and lime juice, allowing the flavors to meld beautifully.
- Add the cooked noodles to the pot, letting everything heat through for a couple of minutes.
- Season with salt and pepper according to your taste preference.
- Serve hot, garnished with fresh herbs.

For a vegetarian option, substitute chicken with tofu and use vegetable broth. Consider adding toasted peanuts for extra crunch.
