Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
 - Combine graham cracker crumbs, sugar, and melted butter in a bowl to form your crust.
 - In a larger mixing bowl, cream together the softened cream cheese, sugar, and vanilla extract until smooth.
 - Add the eggs one at a time, mixing well after each addition.
 - Gently fold in diced apples and cinnamon.
 - Pour the cheesecake mixture over the prepared crust.
 - Drizzle caramel sauce on top and swirl it in.
 - If desired, sprinkle chopped nuts over the top.
 - Bake for 30-35 minutes until the center is set.
 - Let cool, then refrigerate for at least two hours before slicing into bars.
