- 1 cup grated carrots
- 1 cup grated zucchini
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Mix together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Stir in the grated carrots and zucchini until evenly distributed.
- Whisk together the flour, baking powder, baking soda, salt, and ground cinnamon in a separate bowl.
- Add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Mix the powdered sugar, lemon juice, and lemon zest until smooth for the frosting.
- Allow the bars to cool before spreading the lemon frosting on top.
- Cut into squares and serve!
