  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Mix together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. Stir in the grated carrots and zucchini until evenly distributed.
  4. Whisk together the flour, baking powder, baking soda, salt, and ground cinnamon in a separate bowl.
  5. Add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Mix the powdered sugar, lemon juice, and lemon zest until smooth for the frosting.
  9. Allow the bars to cool before spreading the lemon frosting on top.
  10. Cut into squares and serve!
