Ingredients

  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in your cast iron skillet over medium heat.
  2. Add the diced chicken and cook until browned, around 5-7 minutes.
  3. Toss in the chopped onions, sliced carrots, and celery. Cook until softened, roughly 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Pour in the chicken broth and sprinkle in thyme, parsley, salt, and pepper. Bring to a simmer.
  6. Once simmering, add in the egg noodles. Cook for about 10 minutes, or until the noodles are tender.
  7. Serve hot, garnished with fresh parsley.

Notes

Leftover soup can be stored in an airtight container in the fridge for up to 3-4 days. This soup also freezes well; let it cool completely before transferring to a freezer-safe container.
