- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups egg noodles
- Fresh parsley for garnish
Instructions
- Heat the olive oil in your cast iron skillet over medium heat.
- Add the diced chicken and cook until browned, around 5-7 minutes.
- Toss in the chopped onions, sliced carrots, and celery. Cook until softened, roughly 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and sprinkle in thyme, parsley, salt, and pepper. Bring to a simmer.
- Once simmering, add in the egg noodles. Cook for about 10 minutes, or until the noodles are tender.
- Serve hot, garnished with fresh parsley.
Notes
Leftover soup can be stored in an airtight container in the fridge for up to 3-4 days. This soup also freezes well; let it cool completely before transferring to a freezer-safe container.
