- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2½ cups biscuit mix (like Bisquick)
- 1 cup water
- Cooking spray (like Pam)
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1½ cups shredded cheddar cheese (Fiesta blend), divided
- 1 teaspoon garlic powder
- ½ cup mild salsa
Instructions
- Preheat your oven to 350°F.
- Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart as it cooks. Stir occasionally until it’s no longer pink, then drain any excess fat.
- In a medium mixing bowl, combine the biscuit mix and water. Mix until well blended, ideally using your hands for better incorporation.
- Spray a 9 x 13″ casserole dish with cooking spray. Press the biscuit dough firmly into the dish, spreading it evenly to the edges. Bake in the preheated oven for 5-8 minutes, until set and lightly golden.
- Add the chopped onion and red pepper to the skillet with the cooked beef. Cook for about 4 minutes until the vegetables soften. Add the taco seasoning and stir to mix well. Remove from heat.
- Spread the cooked beef mixture evenly over the baked biscuit layer.
- In a medium bowl, mix together sour cream, mayonnaise, drained green chiles, ¾ cup of the shredded cheese, and garlic powder until smooth. Spread this mixture over the beef layer.
- Spoon small amounts of salsa over the sour cream layer (no need to spread it). Sprinkle the remaining shredded cheese on top.
- Return the casserole to the oven, uncovered, and bake for 30 minutes or until hot and bubbly.
Notes
For added flavor, sauté some spices like cumin or paprika with the ground beef. You can swap out the beef for shredded chicken or a meat alternative for a vegetarian version.
