Description

Delicious cheese blintzes filled with ricotta and cream cheese, perfect for breakfast or dessert, paired with a fresh berry sauce.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 2 cups ricotta cheese
  • 1 cup cream cheese
  • 1/4 cup sugar (for the filling)
  • 1 teaspoon vanilla extract
  • Butter (for frying)
  • Mixed berries (for sauce)
  • Sugar (for sauce, to taste)

Instructions

  1. In a medium bowl, whisk together the flour, eggs, milk, water, salt, and sugar until smooth. Allow the batter to rest for about 30 minutes.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter. Pour in a small ladle of batter, swirling to coat the surface. Cook until the edges set, then flip and cook the other side until lightly golden.
  3. In another bowl, blend the ricotta cheese, cream cheese, sugar, and vanilla extract until creamy and well combined.
  4. Place a spoonful of the cheese filling in the center of each crepe, then carefully fold over. Pan-fry on both sides until golden brown.
  5. For the mixed berry sauce, combine the berries and sugar in a saucepan over medium heat until they soften and create a sauce consistency.
  6. Drizzle the berry sauce over the warm blintzes or serve with fresh berries.

Notes

Dust with powdered sugar for an elegant finish and pair with a dollop of sour cream or vanilla ice cream.
