- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 1/4 cup water
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 2 cups ricotta cheese
- 1 cup cream cheese
- 1/4 cup sugar (for the filling)
- 1 teaspoon vanilla extract
- Butter (for frying)
- Mixed berries (for sauce)
- Sugar (for sauce, to taste)
Instructions
- In a medium bowl, whisk together the flour, eggs, milk, water, salt, and sugar until smooth. Allow the batter to rest for about 30 minutes.
- Heat a non-stick skillet over medium heat and add a small amount of butter. Pour in a small ladle of batter, swirling to coat the surface. Cook until the edges set, then flip and cook the other side until lightly golden.
- In another bowl, blend the ricotta cheese, cream cheese, sugar, and vanilla extract until creamy and well combined.
- Place a spoonful of the cheese filling in the center of each crepe, then carefully fold over. Pan-fry on both sides until golden brown.
- For the mixed berry sauce, combine the berries and sugar in a saucepan over medium heat until they soften and create a sauce consistency.
- Drizzle the berry sauce over the warm blintzes or serve with fresh berries.
Notes
Dust with powdered sugar for an elegant finish and pair with a dollop of sour cream or vanilla ice cream.
