- 1 tbsp olive oil
- 1 tbsp butter
- ½ medium onion (chopped)
- 3 cloves garlic (minced)
- 2 cups broccoli florets (fresh or thawed frozen)
- ½ tsp Italian seasoning
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp Worcestershire sauce
- 2 cups cooked (shredded) chicken (like rotisserie)
- 2 cups shredded cheddar cheese (preferably sharp)
- Salt and pepper to taste
Instructions
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the chopped onions and sauté for about 3–4 minutes until translucent.
- Toss in the broccoli and let it cook for an additional 2 minutes.
- Stir in the minced garlic, Italian seasoning, and orzo, toasting them for around 30 seconds.
- Pour in the chicken broth, heavy cream, and Worcestershire sauce. Bring the mixture to a boil.
- Once boiling, lower the heat to a simmer and cook uncovered for about 10 minutes, stirring often until the orzo is tender.
- Add the shredded chicken and stir to heat it through.
- Remove from heat, and mix in the cheddar cheese until melted. Season with salt and pepper to taste.
- Let it sit for 2–3 minutes to thicken before serving.
Notes
Substitute chicken with mushrooms for a vegetarian option. Enjoy with a green salad or garlic bread.
