Ingredients

  • 1 tbsp butter
  • ½ medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups broccoli florets (fresh or thawed frozen)
  • ½ tsp Italian seasoning
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp Worcestershire sauce
  • 2 cups cooked (shredded) chicken (like rotisserie)
  • 2 cups shredded cheddar cheese (preferably sharp)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Add the chopped onions and sauté for about 3–4 minutes until translucent.
  3. Toss in the broccoli and let it cook for an additional 2 minutes.
  4. Stir in the minced garlic, Italian seasoning, and orzo, toasting them for around 30 seconds.
  5. Pour in the chicken broth, heavy cream, and Worcestershire sauce. Bring the mixture to a boil.
  6. Once boiling, lower the heat to a simmer and cook uncovered for about 10 minutes, stirring often until the orzo is tender.
  7. Add the shredded chicken and stir to heat it through.
  8. Remove from heat, and mix in the cheddar cheese until melted. Season with salt and pepper to taste.
  9. Let it sit for 2–3 minutes to thicken before serving.

Notes

Substitute chicken with mushrooms for a vegetarian option. Enjoy with a green salad or garlic bread.
