Ingredients

- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded (rotisserie chicken works wonderfully!)
- 2 cups egg noodles
- 1 cup cheddar cheese, shredded
- Salt and pepper to taste
- 1 cup heavy cream
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until softened and fragrant.
- Pour the chicken broth into the pot and bring to a boil.
- Add the egg noodles and cook according to package instructions until al dente.
- Stir in the shredded chicken and cheese. Add the heavy cream last.
- Season with salt and pepper to taste, adjusting as needed.
- Once heated through, serve hot and garnish with fresh parsley.
Notes
Best served with crusty bread or buttery rolls. For a contrasting side, add a green salad drizzled with vinaigrette.
