Ingredients

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; cook until softened, about 3-4 minutes.
  2. Mix in ground beef, breaking it up as it cooks, until browned and fully cooked. Drain excess grease.
  3. Stir in diced potatoes and chicken broth; bring to a gentle boil. Reduce heat to low and simmer for 15-20 minutes until potatoes are tender.
  4. Add milk and heavy cream, stirring to combine. Heat through without boiling.
  5. Gradually add shredded cheddar cheese, stirring until melted and creamy.
  6. Season with salt and pepper; simmer for another 5-10 minutes to meld flavors.
  7. Ladle soup into bowls and serve hot, garnished as desired.
