- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; cook until softened, about 3-4 minutes.
- Mix in ground beef, breaking it up as it cooks, until browned and fully cooked. Drain excess grease.
- Stir in diced potatoes and chicken broth; bring to a gentle boil. Reduce heat to low and simmer for 15-20 minutes until potatoes are tender.
- Add milk and heavy cream, stirring to combine. Heat through without boiling.
- Gradually add shredded cheddar cheese, stirring until melted and creamy.
- Season with salt and pepper; simmer for another 5-10 minutes to meld flavors.
- Ladle soup into bowls and serve hot, garnished as desired.
