- 1 lb ground beef (can substitute with turkey or chicken)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add the olive oil.
- Add the diced onion and minced garlic. Cook until softened and fragrant, about 3-4 minutes.
- Add the ground beef, breaking it apart while cooking. Cook until browned, then drain any excess grease.
- Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes until potatoes are tender.
- Stir in the milk and heavy cream, heating through but not boiling.
- Gradually add in the shredded cheddar cheese, stirring until fully melted and smooth.
- Add salt and pepper to taste and let it simmer for an additional 5-10 minutes for flavors to meld.
- Ladle into bowls and serve hot. Optional garnishes include extra cheese, crispy bacon bits, or sliced green onions.
Notes
Store in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 3 months.
