Description

Ingredients

  • 1 lb ground beef (can substitute with turkey or chicken)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add the olive oil.
  2. Add the diced onion and minced garlic. Cook until softened and fragrant, about 3-4 minutes.
  3. Add the ground beef, breaking it apart while cooking. Cook until browned, then drain any excess grease.
  4. Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes until potatoes are tender.
  5. Stir in the milk and heavy cream, heating through but not boiling.
  6. Gradually add in the shredded cheddar cheese, stirring until fully melted and smooth.
  7. Add salt and pepper to taste and let it simmer for an additional 5-10 minutes for flavors to meld.
  8. Ladle into bowls and serve hot. Optional garnishes include extra cheese, crispy bacon bits, or sliced green onions.
