Description

A delightful casserole that combines ground beef, cheesy goodness, and rice into a hearty dish perfect for weeknight meals and family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is nicely browned. Drain any excess fat.
  3. Stir in the uncooked rice, beef broth, and cream of mushroom soup. Season with salt, pepper, and paprika. Bring this mixture to a boil, then lower the heat and let it simmer for about 5 minutes.
  4. Transfer everything to your prepared baking dish. Cover the dish with aluminum foil and bake for 25 minutes.
  5. Once that’s done, remove the foil and sprinkle the shredded cheddar cheese on top. Return to the oven and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  6. Before serving, garnish with the chopped fresh parsley for a pop of color.

Notes

Feel free to substitute beef broth with chicken or vegetable broth for a different flavor. You can also experiment with different canned soups.
