Ingredients

  • 6 large eggs
  • 1 cup shredded cheese (Cheddar or choice)
  • 1/2 cup chopped vegetables (spinach, bell peppers, onions)
  • Salt and pepper to taste
  • Optional herbs and spices (garlic powder, paprika, fresh herbs)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cottage cheese and eggs in a mixing bowl. Mix until well blended.
  3. Stir in the shredded cheese, chopped vegetables, salt, and pepper until everything is evenly coated.
  4. Grease a muffin tin or use silicone muffin liners to prevent sticking.
  5. Pour the mixture into the muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
