- 1 cup cottage cheese
- 6 large eggs
- 1 cup shredded cheese (Cheddar or choice)
- 1/2 cup chopped vegetables (spinach, bell peppers, onions)
- Salt and pepper to taste
- Optional herbs and spices (garlic powder, paprika, fresh herbs)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cottage cheese and eggs in a mixing bowl. Mix until well blended.
- Stir in the shredded cheese, chopped vegetables, salt, and pepper until everything is evenly coated.
- Grease a muffin tin or use silicone muffin liners to prevent sticking.
- Pour the mixture into the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Let them cool slightly before removing from the tin. Enjoy warm or store for meal prep!
Notes
For extra creaminess, add a splash of milk or a dollop of Greek yogurt. These can be customized with different cheeses or vegetables.
