Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa verde
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1 cup bell peppers, diced
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1/2 cup onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips or tortillas (optional, for layering)
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine shredded chicken, salsa verde, half of the cheese, diced bell peppers, corn, black beans, chopped onion, garlic powder, cumin, salt, and pepper in a large mixing bowl.
  3. Layer tortilla chips or tortillas at the bottom of a baking dish, if using.
  4. Spread the chicken mixture evenly over the chips or tortillas.
  5. Top with the remaining cheese and additional veggies if you like.
  6. Bake in the oven for 25-30 minutes or until the cheese is bubbly and golden.
  7. Remove from the oven and let it cool for a few minutes.
  8. Garnish with chopped cilantro before serving.

Notes

For extra flavor, add a squeeze of lime juice before serving. Customize the veggies based on your preferences.
