- 2 cups cooked chicken, shredded
- 1 cup salsa verde
- 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- 1 cup bell peppers, diced
- 1 cup corn (canned or frozen)
- 1 cup black beans, drained and rinsed
- 1/2 cup onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips or tortillas (optional, for layering)
- Chopped cilantro (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine shredded chicken, salsa verde, half of the cheese, diced bell peppers, corn, black beans, chopped onion, garlic powder, cumin, salt, and pepper in a large mixing bowl.
- Layer tortilla chips or tortillas at the bottom of a baking dish, if using.
- Spread the chicken mixture evenly over the chips or tortillas.
- Top with the remaining cheese and additional veggies if you like.
- Bake in the oven for 25-30 minutes or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes.
- Garnish with chopped cilantro before serving.
Notes
For extra flavor, add a squeeze of lime juice before serving. Customize the veggies based on your preferences.
