			- 2 cups all-purpose flour
 - 1 cup sugar
 - 1 tablespoon baking powder
 - 1/2 teaspoon salt
 - 1/2 teaspoon baking soda
 - 1/2 cup unsalted butter, melted
 - 1 cup buttermilk
 - 1 egg
 - 1 teaspoon vanilla extract
 - 1 cup fresh cherries, pitted and chopped
 - 1/2 cup brown sugar
 - 1/2 cup rolled oats
 - 1/4 cup flour (for streusel)
 - 1/4 cup unsalted butter (for streusel)
 
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
 - In a large bowl, mix together 2 cups of flour, 1 cup of sugar, baking powder, salt, and baking soda.
 - In another bowl, whisk together the melted butter, buttermilk, egg, and vanilla extract.
 - Combine the wet and dry ingredients until just mixed, then fold in the chopped cherries gently.
 - For the streusel, combine brown sugar, oats, 1/4 cup flour, and 1/4 cup melted butter in a small bowl until crumbly.
 - Fill muffin tins about 2/3 full with batter and sprinkle the streusel mix generously on top.
 - Bake for 18-20 minutes or until a toothpick comes out clean when inserted in the center.
 - Allow to cool slightly in the pan before transferring to a wire rack to cool completely before serving.
 
Notes
Optionally serve with vanilla ice cream or powdered sugar for extra sweetness.
