Description

Delightful cherry cobbler muffins featuring fresh cherries and a crumbly, sweet topping, perfect for brunch or snacks.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and chopped
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup flour (for streusel)
  • 1/4 cup unsalted butter (for streusel)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together 2 cups of flour, 1 cup of sugar, baking powder, salt, and baking soda.
  3. In another bowl, whisk together the melted butter, buttermilk, egg, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed, then fold in the chopped cherries gently.
  5. For the streusel, combine brown sugar, oats, 1/4 cup flour, and 1/4 cup melted butter in a small bowl until crumbly.
  6. Fill muffin tins about 2/3 full with batter and sprinkle the streusel mix generously on top.
  7. Bake for 18-20 minutes or until a toothpick comes out clean when inserted in the center.
  8. Allow to cool slightly in the pan before transferring to a wire rack to cool completely before serving.

Notes

Optionally serve with vanilla ice cream or powdered sugar for extra sweetness.
