Description

Ingredients

  • 3 1/4 cups almond flour (unbleached, fine ground)
  • 1 1/4 cup granulated sugar (unrefined cane sugar)
  • 2 large eggs (at room temperature)
  • 3 tsp natural almond extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (or 325°F for convection bake) and line 1-2 baking trays with parchment paper.
  2. In a large bowl, mix the eggs and sugar together until combined.
  3. Add the almond extract and blend well.
  4. Gradually add the almond flour and a pinch of salt. Use a spoon or spatula to combine until a smooth dough forms.
  5. Form the dough into 1-tablespoon mounds. Roll them into balls and place them on the lined baking sheet, maintaining 1-2 inches of space between each cookie.
  6. Top each cookie with a few sliced almonds for an extra touch.
  7. Bake in the preheated oven for 15-17 minutes, until the tops feel dry to the touch and the edges and bottoms turn golden brown.
  8. Allow the cookies to cool on the baking sheet. Once cool, dust with powdered sugar if desired. Store in an airtight container.

Store in an airtight container at room temperature for 3-5 days, or freeze for up to 6 months. For warming, microwave for 5-10 seconds.
