Instructions
- Preheat the oven to 350°F (175°C) and line your baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking soda, and salt.
- In another large bowl, cream the softened butter with the brown sugar until fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined.
- Roll tablespoons of dough into balls, then roll them in granulated sugar.
- Place them on the prepared baking sheet, giving each ball enough space to spread.
- Bake for 10-12 minutes, or until the edges are golden. Let them cool on the sheet for a few minutes before transferring to a wire rack.
Notes
For thicker cookies, chill the dough for about 30 minutes before baking. You can substitute coconut oil for butter or use a flax egg for a vegan option.
