Instructions

  1. Preheat the oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In another large bowl, cream the softened butter with the brown sugar until fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture. Stir until just combined.
  6. Roll tablespoons of dough into balls, then roll them in granulated sugar.
  7. Place them on the prepared baking sheet, giving each ball enough space to spread.
  8. Bake for 10-12 minutes, or until the edges are golden. Let them cool on the sheet for a few minutes before transferring to a wire rack.

Notes

For thicker cookies, chill the dough for about 30 minutes before baking. You can substitute coconut oil for butter or use a flax egg for a vegan option.
