Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the pumpkin puree, sugar, brown sugar, softened butter, egg, and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips if using.
- Drop spoonfuls of the dough onto a lined baking sheet.
- Bake for about 10-12 minutes or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For the chewiest cookies, avoid overmixing the dough. You can substitute chocolate chips with nuts or dried fruits.
