Ingredients

- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 2 cups egg noodles
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, garlic, sliced carrots, and celery. Sauté until the vegetables are tender, about 5 minutes.
- Stir in the shredded chicken, thyme, salt, and pepper.
- Pour in the chicken broth and bring it to a boil.
- Add the egg noodles and let everything cook for 7-10 minutes, or until the noodles are tender.
- Taste and adjust seasoning if necessary before serving warm.
Notes
For a shortcut, consider using rotisserie chicken. You can also customize the veggies to your preference.
