			- 2 cups cooked chicken, shredded
 - 1 cup rice (any variety works)
 - 2 cups chicken broth
 - 1 can cream of mushroom soup
 - 1 can cream of chicken soup
 - 1 cup onion, chopped
 - 1 cup celery, chopped
 - Salt and pepper to taste
 - 1 cup shredded cheese (optional)
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large mixing bowl, combine the shredded chicken, rice, chicken broth, cream of mushroom soup, cream of chicken soup, chopped onion, chopped celery, salt, and pepper. Mix well.
 - Pour the mixture into a greased casserole dish, spreading it out evenly.
 - Tightly cover the dish with aluminum foil and bake for 1 hour—resist the urge to peek!
 - If you’re using cheese, remove the foil after an hour. Sprinkle the shredded cheese over the top and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
 - Allow the casserole to rest for a few minutes before serving.
 
Notes
You can swap out the chicken for turkey or even a vegetarian alternative for a different flavor profile. Brown rice or quinoa can also substitute traditional rice for added nutrition.
