Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice (any variety works)
  • 2 cups chicken broth
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, rice, chicken broth, cream of mushroom soup, cream of chicken soup, chopped onion, chopped celery, salt, and pepper. Mix well.
  3. Pour the mixture into a greased casserole dish, spreading it out evenly.
  4. Tightly cover the dish with aluminum foil and bake for 1 hour—resist the urge to peek!
  5. If you’re using cheese, remove the foil after an hour. Sprinkle the shredded cheese over the top and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  6. Allow the casserole to rest for a few minutes before serving.

Notes

You can swap out the chicken for turkey or even a vegetarian alternative for a different flavor profile. Brown rice or quinoa can also substitute traditional rice for added nutrition.
